Walnut & Sunflower Seed Banana Bread

It's no secret that I love a good banana bread ... especially because it's such an easy recipe to alter!


This recipe uses my classic banana bread recipe with added walnuts and sunflower seeds to make for a nutty and delicious treat - and as always, gluten, dairy, and refined sugar free.

Ingredients


1/3 Cup coconut Oil 1/2 Cup honey or pure maple syrup 2 Eggs 1 Cup mashed bananas 1/4 Cup milk of choice – I used coconut milk 1 tsp Baking soda 1 tsp Vanilla extract 1/2 tsp Salt 1 3/4 Cup gluten-free flour 1/4 Cup chopped walnuts 1/4 Cup sunflower seeds

Directions

  1. Preheat the oven to 200 degrees. In a large bowl, mix the melted coconut oil, honey, and eggs together.

  2. Add the mashed bananas, milk, vanilla, and salt. Mix ingredients until smooth.

  3. Sift in the baking soda and flour. Stir with a spoon or electric mixer until combined – Some lumps of banana are ok.

  4. Gently stir in the walnuts and sunflower seeds.

  5. Pour the banana bread batter into a greased bread tin and top with additional sunflower seeds.

  6. Bake for 45 minutes or until a toothpick inserted into the center comes out clean.

  7. Let the bread cool and then enjoy!
