Caramelised Banana Bread



With the same fluffy texture as a traditional banana bread, this version is packed with sweet banana caramel flavours for an extra bit of sweetness.


Unlike some of my previous recipes which use honey, this one takes brown sugar but still relies heavily on the natural sweetness of the bananas.


You can also add extra components from your pantry such as nuts, chocolate chips or berries to your liking.


So if you've got some over-ripe bananas on your bench ready for baking, give it a go!

 

Ingredients


3 Bananas

2/3 cup Brown sugar

1/2 cup Olivani butter

1 tsp Vanilla essence

1 tsp Cinnamon

1/2 tsp Nutmeg

1 Egg

1 tsp Baking powder

1/2 tsp Baking soda

1/4 cup Almond milk

2 cups Gluten-free flour

Pinch of salt


Directions

  1. Pre-heat oven to 180 degrees celsius.

  2. Slice and add the bananas to a large saucepan over medium heat. Add 2 tbls of the butter and 1/4 cup of the brown sugar and let melt for a few minutes.

  3. Once the bananas start to caramelise, add the vanilla essence, cinnamon and nutmeg. leave to fry for a further two minutes.

  4. In a separate bowl, add the remaining brown sugar and butter and whisk with an electric beater until fluffy. Add the egg, baking powder and baking soda and combine.

  5. Add the milk and alternatively add flour and caramelised bananas beginning and ending with the flour. Mix well between additions.

  6. Pour the batter into a bread tin and bake for 30-40 minutes or until golden.

  7. Serve warm - enjoy!
