Now that we're out of lockdown (again) and the gym is open, I've returned to my quest of getting stronger and lifting heavy weights. But with that comes a much higher need for protein - something that can prove very difficult on a low-FODMAP vegan diet.
When it comes to protein powders, I've found hemp protein works best for me and I've been adding it to all my post-workout smoothies. But I was thinking of other ways I can sneak a bit more protein into my food and realised it had been a while since I made protein brownies.
So here we go! My first - and thankfully successful - attempt at hemp protein brownies. Super easy, vegan and delicious!
Ingredients
1/2 cup Coconut flour
1/2 cup Gluten-free flour
1 cup Almond milk
1/2 cup Water
1 tsp Baking powder
2/3 cup Hemp protein powder
1/2 cup Dark cocoa powder
1/4 cup Coconut sugar
2 tbs Coconut oil, melted
Dark chocolate, diced into chunks (I used two rows but you can use and much or as little as you like.)
Directions
Pre-heat oven to 180 degrees.
Add all the ingredients except for the dark chocolate into a large bowl and mix with an electric mixer on high for one minute. Once combined, gently stir in the chocolate chunks.
Grease a square baking tin and layer the bottom with baking paper.
Spoon the brownie mixture into the baking tin - it's not a very runny batter so don't be alarmed by it's sticky consistency.
Using the back of a spoon, spread the mixture evenly and pop into the oven to bake for 15-20 minutes.
Once baked, let cool and enjoy! Store in the fridge for up to a week.
