Vegan Hemp Protein Brownies

Now that we're out of lockdown (again) and the gym is open, I've returned to my quest of getting stronger and lifting heavy weights. But with that comes a much higher need for protein - something that can prove very difficult on a low-FODMAP vegan diet.


When it comes to protein powders, I've found hemp protein works best for me and I've been adding it to all my post-workout smoothies. But I was thinking of other ways I can sneak a bit more protein into my food and realised it had been a while since I made protein brownies.


So here we go! My first - and thankfully successful - attempt at hemp protein brownies. Super easy, vegan and delicious!

Ingredients


1/2 cup Coconut flour

1/2 cup Gluten-free flour

1 cup Almond milk

1/2 cup Water

1 tsp Baking powder

2/3 cup Hemp protein powder

1/2 cup Dark cocoa powder

1/4 cup Coconut sugar

2 tbs Coconut oil, melted

Dark chocolate, diced into chunks (I used two rows but you can use and much or as little as you like.)


Directions

  1. Pre-heat oven to 180 degrees.

  2. Add all the ingredients except for the dark chocolate into a large bowl and mix with an electric mixer on high for one minute. Once combined, gently stir in the chocolate chunks.

  3. Grease a square baking tin and layer the bottom with baking paper.

  4. Spoon the brownie mixture into the baking tin - it's not a very runny batter so don't be alarmed by it's sticky consistency.

  5. Using the back of a spoon, spread the mixture evenly and pop into the oven to bake for 15-20 minutes.

  6. Once baked, let cool and enjoy! Store in the fridge for up to a week.
