Vegan Date Slice

Craving something sweet but have minimal ingredients and time? This date slice recipe is all you need.
Dates are such a great option for a vegan treat and being so naturally sweet, you don't need to feel guilty for eating a few too many.
This recipe is super easy and is just as delicious warm with yogurt or chilled straight from the fridge.
Ingredients
Filling
2 1/2 cups Mojito dates (pitted)
1 cup Water
1 tbs Brown sugar
1/4 tsp Baking soda
Crumble
1 3/4 cup Gluten-free rolled oats
1/2 cup Gluten-free flour
1/2 cup Coconut flour
3/4 cup Brown sugar
1/4 tsp Baking powder
3/4 cup Dairy-free Olivani spread
Directions
Preheat oven to 180 Celsius. Start with the date filling - Add all the filling ingredients to a small pot over high heat.
Cook on high until the filling mixture starts to boil then turn to low. Let simmer for five minutes until the dates are soft and set aside to cool.
In a large bowl, mix together the oats, flours, baking powder and brown sugar. Add the Olivani spread and mix to form a crumble-like consistency.
Spoon 2/3 of the crumble mixture into a baking tin lined with parchment paper. Press the mixture down firmly into an even layer.
Pour and spread the date mixture layer, then press the remaining oat mixture on top. Bake for 30 minutes or until the crumble is golden.
Leave to cool completely, then slice.
Enjoy warm with some dairy-free yogurt or chilled from the fridge.
