Pumpkin French Toast

This spin on a classic french toast recipe is exactly what you need to cure those winter blues.


I know what you’re thinking, pumpkin french toast sounds a little crazy. But trust me, the flavour combo of pumpkin and cinnamon topped with the sweet delight of fresh fruit and maple syrup makes it possibly even better than the original.

Ingredients


½ cup Pumpkin puree 2 Eggs 1 tsp Cinnamon 2 tbsp Coconut oil 3 Slices of gluten-free bread


Directions


  1. Beat the pumpkin puree, eggs, and cinnamon together in a shallow bowl.

  2. Soak the bread slices into the pumpkin mixture until coated on both sides.

  3. Melt the coconut oil in a large pan over medium-high heat. Place the soaked bread slices into the pan and cook until browned on both sides.

  4. Stack the french toast on a plate and top with all the yummy stuff!
