Paleo Banana Nutella Muffins

If you love the sound of Nutella and banana without the guilt of cheating your healthy diet - this recipe is made for you.


These muffins are made with the base of my plain paleo banana muffin recipe which is naturally free from gluten, dairy, and refined sugar. Then, to give it a chocolatey twist I added a tablespoon of Nutella to the center of each muffin before baking and voila! Gooey, soft, and decadent paleo banana Nutella muffins.

Ingredients


1/3 cup Cashew spread

1 Egg

1/2 tsp Vanilla extract

3 Bananas, mashed well

1 cup Brown rice flour (Or Almond flour)

1 tsp Baking soda

1 tsp Cinnamon

1/4 tsp Salt

Nutella for filling


Directions


1. Preheat oven to 200 degrees.

2. In a large bowl mix the cashew spread, egg and vanilla essence. Add the mashed banana and mix until mostly smooth - some lumps of banana is fine.

3. Sift the flour, baking soda, cinnamon and salt then mix with an electric beater on low until combined.

4. Grease a muffin tray (coconut oil works well). Fill a muffin cup half way with batter, before spooning a tablespoon of Nutella into the center. Top the Nutella layer with another scoop of batter, filling the rest of the cup.

5. Repeat the layering method until all the batter has been used (should make eight medium-sized muffins).

6. Bake the muffins for 15 minutes or until golden. Enjoy hot out of the oven or store in the fridge for up to a week.
