Nutella Swirl Banana Bread

One of my all-time favourite things to bake is banana bread - it's super easy, yummy, and even healthy if you use clean ingredients.


This particular recipe has a 'free from' banana bread base with Nutella swirl, obviously, Nutella isn't fully gluten, dairy, or sugar-free, but you could either use a clean hazelnut spread as an alternative or just leave the Nutella out - either way, it'll still be delicious.

Bananas generally pair with almost any flavour so feel free to experiment.

Tip: Peanut butter also makes for a great swirl option

Ingredients


1/3 cup Coconut Oil 1/2 cup Honey or pure maple syrup 2 Eggs 1 cup Mashed bananas 1/4 cup Milk of choice - I used coconut milk 1 tsp Baking soda 1 tsp Vanilla extract 1/2 tsp Salt 1 3/4 cup Gluten-free flour 1/4 cup Nutella or hazelnut spread


Directions


  1. Preheat the oven to 200 degrees. In a large bowl, mix the melted coconut oil, honey, and eggs together.

  2. Add the mashed bananas, milk, vanilla, and salt. Mix ingredients until smooth.

  3. Sift in the baking soda and flour. Stir with a spoon or electric mixer until combined - Some lumps of banana are ok.

  4. In a separate bowl, heat the Nutella for 30 seconds in the microwave or until melted.

  5. Pour half the banana bread batter in a greased bread tin before pouring half of the melted Nutella on top. Pour the rest of the batter in the tin then top with the remaining Nutella (basically layer the two batters).

  6. Using a skewer or the back of a spoon, gently swirl the batter.

  7. Bake for 45 minutes or until a toothpick inserted into the center comes out clean.

  8. Let the bread cool and then enjoy!

Tip: If coming back to a slice later, try popping it in the microwave for 30 seconds to get the Nutella swirl gooey again!
